Apple Pear Green Salad

A friend of mine said that her children and husband, who usually avoid eating salads, always want seconds of this one.  The original recipe came from "The Costco Connection" magazine, so I tried it with some variations.  It's wonderful with sweetened and spicy pecans; however, toasted nuts also work.  The dressing made with orange juice is light and refreshing and keeps the pears and apples from turning brown.  I have now served it many times with great reviews and it is the only salad my 15 year-old son gobbles up. 8- 10 cups loosely packed baby greens 1 apple and 1 pear, halved, cored, and sliced into thin wedges or chunks 1/2 cup or dried cranberries infused with pomegranate juice or pomegranate seeds 1/2 cup feta cheese 1/2 cup pecan, toasted and chopped small (toast with honey to make this salad even better) Dressing: 3 tbsp extra virgin olive oil 2 tbsp red wine vinegar 2 tbsp orange juice 2 tbsp honey or agave nectar Sea salt Black pepper, ground   Toss greens, dried cranberries, apple and pear slices or chunks and cheese together.  If you are making the salad ahead of time, place cut pear and apple in some orange juice to prevent browning and add drained fruit to greens just prior to adding salad dressing. Mix salad with nuts and dressing just prior to serving.
