Cranberry Vinaigrette

Essentially a simplified version of Chef John Ash's Cranberry Vinaigrette, this festive salad dressing tastes great on greens combined with red onions, oranges and lightly glazed pecans in a simple salad.  It is a wonderful way to add cranberries and their great health benefits into your diet without having to add sugar.  Purchase these dry roasted pecans with cranberry and cinnamon at Costco or Amazon.  Simple but delicious! 1 cup fresh or frozen, thawed cranberries ½ cup fresh orange juice 1 tablespoon finely chopped shallot or green onion, white part only 2 tablespoons rice vinegar 1 tablespoon raw honey or real maple syrup 1 tablespoon fresh lime or lemon juice 1/3 cup extra virgin olive oil or Canola oil Kosher or sea salt Freshly ground pepper In a blender or food processor, combine the cranberries, orange juice, shallot, vinegar, honey, and lime juice; puree.
