Green Bean Wontons with Dipping Sauce

My daughter, Genevieve, brought home the best Early Sprouts family recipe kit from her preschool!  It was the perfect end to this mommy - daughter activity.  It took us about 15 minutes from start to finish to make 8 wontons.  She and I loved them, but I was curious if my non-compliant eater, child #3, would even try it.  Success!  Kudos to the green bean wonton!  My husband's comment was, "Are there any more?" Ingredients: 1 cup green beans 8 wontons 2 tablespoons rice vinegar 1 tablespoon low-sodium, wheat-free tamari 1 teaspoon honey (or agave nectar) 1 tablespoon canola oil 1. Cut the green beans and remove their stems.  Shred the green beans using a food processor or chop them finely with a knife. 2. Heat the oil in a nonstick skillet over medium-to-high heat.  Sauté the shredded green beans until they're tender.  Allow them to cool. 3. To create a green bean wonton, take one wonton wrapper, place 1/2 tablespoon of shredded green beans in the center of the wrapper, wet all sides of the wonton with your finger, and then fold the wonton into a triangle.  Press the edges together.  Repeat until you have made all 8 wontons, or as many of them as you want. 4. Heat a small amount of oil in the nonstick skillet. 5. Saute the wontons 2 to 3  minutes per side or until slightly golden. 6. While the wontons are cooking, prepare the dipping sauce by mixing the tamari, rice vinegar, and honey in a small bowl. 7. Remove the wontons from the pan.  As soon as they reach a safe eating temperature, serve with the dipping sauce.
