Quick Spinach Mozzarella Salad

When it's time to eat dinner and I'm not on the ball, I usually make this salad (especially for my girls who like tomatoes). It began as a simple tomato and fresh mozzarella salad with balsamic dressing, red onion and fresh basil (if I had it). Over time I added more and more spinach without them even noticing. It's fast and I almost always have the ingredients. 1/2 cup fresh mozzarella, cut in 1/2 inch chunks 2 medium tomatoes, chopped 1/2 cup fresh baby spinach 1 tbs red onion, thinly sliced and chopped 1 tbsp light balsamic salad dressing 1 tbsp toasted pine nuts, optional fresh basil, optional Throw ingredients together and toss. Makes 2 serving.
