Zucchini Sticks

We make these at our wellness camps for kids and they go crazy for them. Children enjoy them even more when they help with the preparation. Specific steps to involve children are shown below.  By the way, adults love them just as much as kids do!   Mister filled with olive oil or Canola oil cooking spray ¼ cup whole-wheat flour or whole-wheat white flour ¼ cup corn flour or cornmeal 1  teaspoon salt ¼ teaspoon freshly ground pepper 1  lb zucchini (about 2), cut into ½-by-3-inch sticks 2  large egg whites, lightly beaten Preheat oven to 475°F. Coat a baking sheet with cooking spray or mister. Combine flour, cornmeal, salt and pepper in a large sealable plastic bag. Dip zucchini in egg white, place in bag and shake to coat, and then arrange, not touching, on the baking sheet. Coat all exposed sides with mister filled with olive oil or cooking spray. Bake on center rack for 7 minutes. Turn the zucchini and coat any floury spots with cooking spray. Continue to bake until golden and crispy, about 5 minutes more. Serve hot. Serves 4. Ways to involve children in cooking this recipe: 1. Children can coat baking sheet with cooking spray. 2. Children can measure and combine flours. 3. Children can dip zucchini in egg white and shake in the bag to coat. 4. Children can help arrange zucchini on baking sheet.
